Salams my fellow cooks, this includes my dear sisters and I’m hoping brothers too. I pray you are all well π I was planning on posting a recipe each week but you know that thing called Life? Well that was happening π Anyways today’s recipe is definitely one of my faves. I’ve been using this recipe for over a decade and is one of my most popular ones which ive passed on to many friends and family who have always enjoyed feasting on it. It’s a fried chicken recipe but for a healthier version you can marinate the chicken overnight in the sauce ingredients and then either cook on the stove top or bake it in the oven. INGREDIENTS:
Marinade
2 washed and clean chickens (cut into 8 pieces)
3 tspn Lemon juice
2 tspn malt vinegar
2 tspn coarse black pepper
1 and half tspn Salt
Sauce
6 tbsp oil
2 cups tomato ketchup
2 tspn coarse black pepper
1 and half tspn chilli powder
1 and half tspn chilli flakes
1 tspn Salt
Batter
1 medium egg (whisked)
1 cup Cornflour
METHOD:
Marinating
Place the chicken, lemon juice, vinegar, black pepper and salt into a medium sized bowl and mix well. Cover with cling film and allow to marinate in the fridge for a minimum of 1 hour.
Sauce
Heat the oil in a saucepan, add the tomato ketchup, black pepper, chilli powder, chilli flakes and salt. Bring to the boil and allow to simmer on low heat, occasionally stirring.
Batter
Add the egg and cornflour to the pre-marinated chicken and mix well.
Deep fry the Chicken until golden brown and Cooked on the inside. Coat the chicken in the sauce.
Serve with chips and/or salad.

The beautiful gazebo sauce is ready, coat the chicken piece by piece generously in the sauce
Grab a plate and go tuck in!!

How long do you deep fry the chicken for?

Walaykumsalam, yes u can leave the skin on if you prefer it and also possible to shallow fry…you will need to turn it often to make sure it’s evenly cooked throughout

Salaam is there a way we can possibly make this in the oven without frying the chicken. ? We’re quite health conscious and really try hard to cook recipes which do not involve frying but ive heard so much about gazebo chicken! X

Wasalams I’ve not tried this particular recipe and baked it but i suggest you can make salt and pepper chicken or any other marinade and then bake it, make the gazebo sauce as per recipe and dip the baked chicken in there..let me know how u get on and hope that helps

Walaykumsalam Sorry for late reply…Erm this recipe is all about the sauce actually, maybe try some passata to make a sauce and then dip in there, you can use same spices and method…let me know if you try it any other way

You can use milk to make a batter…not too much that the batter will get runny

Hi Hajra.
When opting for the healtheir version and you have to marinate the chicken in the sauce overnight, do you still coat it witb tbe batter? And when do you do it? Before adding to sauce?

Salams…if your making a healthier version, then I suggest u do a simple marinade with green chillies, salt, pepper etc and then bake the chicken and then make the sauce as in recipe and dip chicken in sauce once baked…the batter is only if you’re going to fry it
